Oxygenated Fatty Acids

Oxygenated fatty acids, also referred to as hydroxy-fatty acids, are derivatives of saturated or unsaturated fatty acids. These fatty acids may be branched or unbranched and contain one or more hydroxyl groups along the fatty acid chain. An important group of oxygenated fatty acids is "-hydroxy fatty acids which are hydroxylated at the C-2 position on the fatty acid chain. The "-hydroxy group allows for hydrogen bonding with membrane proteins. Another important class of oxygenated fatty acids is $-hydroxy fatty acids. $-hydroxy fatty acids are hydroxylated at the C-3 position of the fatty acid chain. $-hydroxy fatty acids with chain lengths from 10-18 have been used as biomarkers for the quantification and characterization of endotoxins and Gram-negative bacterial communities in atmospheric aerosols.
